Lemony Kale Salad

I recently found this recipe in Better Homes and Garden, and Patrick and I are addicted.  

It's even a good one to serve when you have friends over (right Price family?).

Lemony Kale Salad

2 bunches of kale
3 cups cherry tomatoes, halved
1 cup homemade croutons (drizzle olive oil and salt over torn bread and toast)
3-4 lemons
1/4-1/2 cup olive oil
salt and pepper to taste
1/2 cup shaved parmesan 
1-2 cups of chicken

1. Trim and discard tough stems on kale.  Cut 1/4 inch strips across the leaves.

2.  In a large bowl, combine kale, tomatoes, croutons,.  Juice lemons over salad ingredients.  Drizzle olive oil, sprinkle salt and pepper, then toss.  To serve, sprinkle salad with shaved Parmesan and chicken.
